What Causes Hemorrhoids?

Hemorrhoids, also called piles, are inflamed veins that come to the surface of the skin on or around the anus. They are extremely uncomfortable and often cause itchiness and discomfort sitting. The shallot is the most popular spice in Vietnamese cooking from yesteryear as well as today. Onions may be more bitter than shallots, but they are also frequently used.

Garlic, the old trusty favourite. In Vietnam, garlic is used fried, raw and grilled in almost every dish. Since it compliments almost every ingredient and strongly seasons the rest, one can add it to stir fries, braised or grilled dishes, as well as stews and marinades. Raw garlic is used to make dips and salads. As they tend to have a sweeter taste, small fresh cloves are more often used than the larger ones. 

Annatto seeds have an earthy and peppery flavour but are used mainly for the orange to red dye it produces during the cooking process. These ground up tiny seeds are normally used with vegetable and rice dishes.

Caramelized cane sugar gives a deeper, richer taste to sauces and marinades while lightly toasted or crushed peppercorns add some bite to stir fries and braised dishes. Cinnamon is another popular spice used in Vietnamese cuisine, especially in stews, soups and desserts and is used in all its forms; dried, ground or as folded sticks.

The ginger root is important as well as popular in Vietnam. It doubles as herb and spice, providing both flavour and health benefits to poultry and seafood dishes as a marinade. Ginger sooths diarrhea and warms the body and helps to keep a person healthy during winter times. This pungent spice can be used fresh or grilled for noodle, braised dishes and herbal teas as well.

Another similar looking spice to ginger with healing properties the Vietnamese use is turmeric. Its main use is as colour giving marinade, infusing ingredients with orange and a mild acidic flavour. It can cloud unwelcome smells of seafood that tends to be too ‘fishy’ and is one of the main spices blended together to create curry powder. Curry powder’s warm colour comes from turmeric. An old Vietnamese home remedy is to apply turmeric juice to torn skin for scar-free healing.

Stewed and grilled fish, even other fried seafoods, enjoy the touch of lemongrass and galangal. Both are used to season poultry, pork and broth dishes.

Star anise tastes like licorice and like their name suggests, appears in the shape of eight-pointed stars. Ground or used whole, this spice is as versatile as can be, rounding off sweet desserts as well hitting all the right notes in main courses and soups. Star anise is one of the ingredients in the country’s strong ‘five-spice’ powder. Cloves, fennel seeds, licorice and cinnamon complete the blend that gets added in moderate amounts to meat, stews and marinades.  

Chilies appear to be a matter of personal taste and choice in Vietnam. Some like it, some don’t. Those who savour the bite that chilies can bring prefer the particularly hot bird’s-eye chilies when cooking or marinating ingredients. The spice can be used dried and whole, frozen or added as flakes.

Vietnamese spices are exceptional in the sense that they are unapologetically Eastern, their flare coming not only from flavour but also their beautiful shapes and shades. Genuine Vietnamese cooking may take some getting used to for the beginner but once accepted, it will be a lifelong love affair.

Soda is a prominent drink that many people choose to indulge in at all times of the day. However, soda is not exactly the healthiest of drinks. In most cases, soda is packed full of ingredients that can be damaging if indulged in regularly. Soda is made from carbonated water which is also not healthy and even diet soda drinks can prove to be unhealthy despite what it may say on the tine. What I use in my cooking could be very different from what you use and vice versa. I know I use an entirely different array of spices and herbs than my mother did. The most popular combination of spices and herbs used in cooking are salt, pepper and garlic. Most people use them. They’ve even come out with a bottled version called grill seasoning. It goes good with anything from salads to meats and adds plenty of flavor to your cooking.

Different countries have combinations of spices that are used in most every dish. Italian foods usually contain a mixture of basil, oregano and thyme and Southern American fare uses cilantro, parsley and oregano. The French have their own combination as I’m sure do the Africans, Spanish and Australians. Depending upon where you live, the combination of herbs you use reflects your culture and is a part of your heritage.

Different dishes call for different spices and herbs. While I would cook seafood with garlic, butter, dill, salt and pepper, I would not use that combination on steak. I might use garlic, oregano and salt, pepper and lemon. Most vegetables only need salt, pepper and garlic, whereas chicken or turkey tastes better with rosemary and sage. Some cultures like to heat up their foods by adding hot sauce or hot peppers. Some regions use what is locally grown such as tomatoes, onions or even fruits.

If you or your family have health concerns, you may not be able to use certain spices, herbs or flavorings. Some people have allergies or other health or diet related issues that only allow the basic seasonings and do not allow salt, pepper or things that interfere with medications. Usually this type of diet allows fresh herbs or other natural flavorings. Check with your health professional before adding any new spice to your diet if you suffer from a condition that requires medical attention.

Finally, individual tastes dictate what types of spices and herbs people use. My mom didn’t like the taste of salt so she never used it. I cook with salt but don’t add it after cooking. My daughter doesn’t like onions, but she has learned to pick them out when she comes to dinner at my house. Make a Nice Ice Mold

A solid ice ring will sit nicely in your party punch bowl, keeping your festive party drink chilled and delicious.

Take a gelatin ring mold (preferably a plastic one). Fill your gelatin ring mold with fresh water. Add a bit of food coloring to match your party decorations and colors, if you wish.

Cut-up strawberries, blueberries, or even citrus fruit may be added at this point depending on your punch recipe.

Freeze the gelatin ring mold for several hours (ideally, overnight) before the party.

Slip Ice Out and Serve

Just before serving your party punch, slip the pretty frozen ice ring out of the gelatin mold, and place it in your punch bowl.

Pour your prepared party punch over the ice ring.

Fancy glass punch bowls can be quite pricey. With little ladles and matching punch cups, a punch bowl set can cost a pretty penny. Why shell out plenty of cash for a punch bowl, when you can improvise a bit and create your own?

Here’s a simple solution. If you have a glass-domed cake platter (with a pedestal base), you can make your own pretty punch bowl in a moment. (Glass-domed cake platters are available at discount department stores, and they are considerably less costly than punch bowls.)

Flip the pedestal cake base over on your serving table, so the pedestal portion is facing upwards. Invert the glass dome cover, and set it on top of the pedestal cake base.

Voila! You now have a lovely, party-perfect punch bowl. (This trick also works for seven-layer salads, trifle desserts and other showcase recipes requiring a footed serving bowl.)

Perfect Potato Chowder

The whole family will love this delicious soup, which can easily be cooked up as a vegetarian meal (if you leave out the optional meat toppings).

Potato chowder is great for autumn gatherings, stadium tailgate parties, potluck dinners and casual parties. It’s also perfect for a simple supper on a chilly night.

This family-friendly concoction is easy to whip up in a hurry from items you may already have in-stock in your home pantry.

Ingredients for Perfect Potato Chowder:

1 tablespoon margarine (or butter)
1 cup chopped onion
2 cans (10.75 oz. each) Cream of Potato condensed soup
2 cups milk
1 cup light cream (or half-and-half)
2 cans julienne carrots (Do not drain the carrots.)
3 tablespoons chopped fresh parsley

Perfect Potato Chowder directions:

In a large soup kettle, melt the margarine over medium heat. Add the chopped onion, and cook till it is fully tender, stirring occasionally to prevent scorching.

Stir in the condensed potato soup, milk and cream until all ingredients are well-mixed.

Add the julienne carrots, including their liquid, right from the can.

Toss in the parsley. In a pinch, dried parsley may be substituted.

Heat the potato chowder slowly, stirring often for even cooking. Use a plastic scraper or wooden spatula to keep the mixture from sticking to the pot.

Top with cooked bacon crumbles or shredded cheddar cheese, if desired. Serve potato chowder hot in sturdy mugs or favorite soup bowls.

Cover leftover soup tightly, and refrigerate for a lovely next-day lunch treat.

Here are a few additional variations for Perfect Potato Chowder:

Try adding 2 cans of corn, 2 cups of boneless chicken, ham or tuna (cooked and diced) for a heartier meal.

Perfect Potato Chowder may also be made in a slow cooker or crock pot, as long as the mixture is stirred frequently.

Popular South-Eastern Chinese fried rice recipes

Recipe 1: Chinese Fried Rice with Salted Fish and Chicken

Chinese salted fish is available in Chinese food stores
selling cured meat and other dried foods. The salted fish is popular in
southeast China and is called “Ma You salted fish” in Cantonese. It has a
special strong aroma, which arises appetite, and goes well with rice and
fresh meat.

Ingredients

2 oz. Chinese salted fish

4 oz. chicken breast

1 egg, beaten

1/8 oz. ginger

1 head chives

12 oz. rice, cooked

1/2 tsp. starch

1/2 tsp. salt

2 tsp. light soy sauce

1/4 tsp. sugar

Instructions

Cut the salty fish meat into 1/4″ cubes, and the
chicken breast into 1/2″ cubes. Finely chop the ginger and chives.

Pickle the chicken with the salt and starch for 15 minutes.
Heat half of the oil in a pan and saute the salty fish. When the aroma rises,
add the ginger, chives and beaten egg, stir fry until the egg solidifies. Take
out the saute and use remaining oil to saute the chicken breast until it is
barely well done.

Take out the chicken and heat the other half of the oil. Add
the rice and saute until the grains separate easily with each other. Add the
sauteed chicken and salty fish, stir to blend them. Flavor with the soy sauce
and sugar before turning off the heat.

Note: the salted fish has strong aroma, and if not properly
stored, the aroma will turn into a disgusting smell. Unused salted fish should
be stored in airtight glass containers or plastic bags, and placed at cool and
dry places or inside the fridge.

Recipe 2: Chinese Fujian Fried Rice

This special Chinese seafood and meat rice dish is a blend
of fried rice and risotto, so you can enjoy the delicacy of both at the same
time!

Ingredients

2 oz. prawn meat

1 oz. scallop, fresh or dried and soaked

1 oz. chicken, leg or breast meat

1 oz. Chinese style braised duck (if unavailable, may use smoked duck breast instead)

2 oz. mushroom, fresh or canned

2 oz. tomato

1 egg, beaten

12 oz. rice, cooked

1 T. vegetable oil

1 T. oyster sauce

1 T. soy sauce

1 T. starch

To taste salt

Instructions

Cut all the vegetables, meat and seafood into 1/3″
cubes.

Heat 1/2 T. oil in a pan, and saute the scallop and
chicken with medium heat for 1-2 minutes, until they turn opaque (barely cooked on the surface).

Heat the other 1/2 T. oil, and saute the beaten egg to medium
well done. Add the rice and saute until the grains separate easily with each
other. Take out the fried rice.

Boil all the vegetables, meat and seafood in 12 oz. water.
When the vegetables are well done, blend the starch with 1 T. water, and
add the starch blend into the boiling mixture. Slightly stir and turn off the heat. Pour the
mixture on top of the fried rice.

Note: the feature of this dish is the base of fried rice plus
the topping of risotto. Thus, the starch sauce for the topping should be thick
enough to make the dish delicious.
